Sift flour into a large bowl. Add all ingredients, except the almonds, one by one and knead well. If the dough is a bit crumbly, knead in 1-2 tablespoons of melted butter and possibly a little water until the dough is pliable for rolling out. Lightly dust the work surface and roll out a good handful of dough with a lightly dusted rolling pin. Line the baking sheet with parchment paper and sprinkle with the flaked almonds.
Spread the cut out cookies on the almond flakes. Bake at 170°C on the middle shelf for about 18 minutes. Continue in this way until the dough is used up.
