Mix flour, salt and 370 g sugar in a bowl. Add egg yolk and fat in flakes.

Knead everything first with the dough hook of the hand mixer, then work into crumbles with floured hands. Put about 2/3 of the crumble into the greased, floured pan of the oven and press down to form a base. Peel, quarter and core the apples. Cut apple quarters into wedges, sprinkle with lemon juice and spread on the pastry base.

Whisk eggs, cream, 130 g sugar and vanilla sugar. Pour the glaze evenly over the apples. Spread remaining crumble on top and bake in preheated oven at 175°C convection oven for about 45 minutes. Let the cake cool and dust with powdered sugar before serving.
