Mix flour, butter, sugar, lemon zest (or optionally a pack of Citroback), salt and the egg yolks and knead into a dough. Peel the apples and cut them into pieces, boil them with some sugar and water in a pot for 5 min (mash them a little more to taste), let the mixture cool down.

Divide the dough into two pieces.

Roll out the larger part and line the form (approx.


20 cm diameter) with it. Now spread the cooled mass on the dough. Roll out the rest of the dough and place it on top of the apple mixture. Press on the sides. Now brush the whole thing with an egg yolk (mixed with a little water). Bake in a preheated oven at 180°C for 45 – 50 minutes. Best enjoyed still warm.
