First preheat the oven to 180°C convection oven. Beat the butter in a large bowl until fluffy. Sift in the sugar and continue beating until the mixture becomes fluffy.
Stir in egg and applesauce. Combine flour, baking soda, salt, cinnamon, ginger powder and cloves and stir into butter-sugar mixture. Add the raisins, walnuts and chocolate chips and stir to combine. Line a baking tray with baking paper.
For each cookie, scoop out a lightly heaping teaspoonful of the dough and place on the baking sheets.
Leave about 5 inches of space between each mound. They will rise a bit more. Place in hot oven and bake for about 5-7 minutes – no longer. They will seem a little soft, but that is normal. Process the rest of the dough in the same way.
Tip: If you don’t like raisins or raisins, you can of course omit them or replace them with other ingredients of your choice.
