Sauté the garlic and the torn kaffir lime leaves in a little oil, add the vegetable strips.

Deglaze with the vinegar and let it boil away. Add fish sauce, 1 tablespoon soy sauce, sesame oil and sweet chicken sauce, dilute with a little water if necessary and steam the vegetables until crisp. Clean the fish fillets, lightly salt and roll in the rice flour – tap off excess flour.

Fry in a little olive oil on both sides over 2/3 heat, adding the crabs after turning and seasoning with 1 tablespoon soy sauce before putting the fillets on.


Dressing: Put the vegetables on plates, place a fish fillet on each and add the warmed crabs.
