Wash the apples and remove the core generously with a corer. Mix the marzipan, raisins, almonds, cinnamon, clove powder and rum (to taste), preferably with your hands.

Fill the mixture into the prepared apples (I add some apricot jam on top, but it’s a matter of taste). Put the apples in a greased baking dish and bake for about 30 minutes in a preheated oven at 180°C.

In the meantime, prepare a water bath.


Mix egg yolks, mulled wine and sugar and beat in the slowly heating water bath until foamy – but be careful not to let it get too hot, otherwise the eggs will stiffen!

Put some mulled wine foam on a deep plate first, then put the baked apple on top and put some more mulled wine foam on top.

It goes best with cinnamon ice cream.
