Put the flour in a large bowl and make a well in the center. Dissolve the yeast in a little warm water, add to the flour and knead well. Add olive oil and spoonfuls of warm water with a little salt – the dough should be very smooth.
When it is well kneaded, it must rise in a covered bowl for about an hour until bubbles form. In a deep fryer or deep frying pan, heat the fat to about 190 °C. Drop in the batter by the spoonful, fry until brown and drain on paper towels. The balls can be salted or sweetened with sugar, or liquid honey, depending on whether you add dry or sweet white wine.
