Score the meat 4-5 cm deep about 2 cm apart and fill the cuts with a slice of bacon each. Wrap the meat tightly with a thread, season with salt and pepper and brown well all around with the onions in the lard, add the carrots and tomato paste and roast a little. Extinguish with the beer.
