Divide the broccoli into small florets and blanch briefly in boiling salted water.
Drain and rinse. Cut the ham into small cubes.
Roll up the puff pastry and cover with broccoli, ham and grated cheese, pepper a little and roll up into a strudel. Brush with beaten egg and bake in the oven at 180 degrees for 15-20 minutes until golden brown. Mix sour cream and yogurt together.
Season with salt, pepper and finely chopped fresh herbs. Serve the strudel with the yogurt dip.
