Brown the flour vigorously in 40 g butter in a saucepan, stirring constantly. Deglaze with ½ l of water, stirring constantly until the sauce boils.

Add the meat extract, wine vinegar and sugar, season with salt and pepper, then simmer gently for 15 minutes. Then add cream and crab meat and heat. Do not boil anymore, otherwise the crabs will become hard. Brown the remaining butter and stir into the crab ragout just before serving. Serve with rice and green salad.
