Cut the potatoes into not too small pieces and bring to a boil in a little salted water. Cut the bacon into cubes, fry properly. Cut the onion into small pieces and add. Continue frying until the onions are nicely browned.
When the potatoes are very soft, pour off enough water so that the potatoes are no longer covered.
Mix the flour with a little cold water to make a roux and add it directly to the potatoes or the water.
Then add the buttermilk and bring everything to the boil, add the bacon and onions, the sausage cut into pieces and bring everything to the boil again, season with salt and pepper if necessary. Tip: Add the buttermilk little by little, then you can see how much liquid it becomes.
