The oil is mixed with the lemon juice and seasoned with salt and pepper. If the bacon is not yet cut, cut off the rind and cut the bacon into very thin slices.
Grate the mushrooms and cut them into thin slices as well.
Spread the bacon loosely on 3 plates, as well as the mushrooms, cheese and walnuts.
Finally, add the washed lamb’s lettuce and drizzle with the vinaigrette. Serve with Vinschgerl (Vinschgau flatbread) or rye bread.
