Sauté onions and celery in 1 tablespoon oil.

Add vegetable stock and both types of mustard and steam the celery, covered, until just al dente. Fry the apple slices in 1 tbsp oil on both sides until golden brown.

Add silken tofu to celery and season with salt, pepper and lemon juice. Serve garnished with walnuts and apple slices.
