800 grams Chard 📝 🍽
1 bunch Spring onion 📝 🍽
450 grams Puff pastry (frozen) 📝 🍽
100 grams Walnuts 📝 🍽
6 tablespoons Olive oil 📝 🍽
175 grams Feta cheese 📝 🍽
3 Eggs 📝 🍽
5 tablespoons Milk 📝 🍽
125 grams Butter 📝 🍽
  Paprika powder 📝 🍽
  Salt and bell pepper 🍽
  Flour for work surface 🍽
1 teaspoon Spice paste (harissa) 📝 🍽
2 Garlic cloves 📝 🍽
500 grams Yogurt 📝 🍽

🍽 Instructions

Defrost the puff pastry sheets side by side. Pluck, wash and coarsely chop the chard.

Clean the spring onions, wash and cut into fine rings. Crumble the cheese, chop the walnuts. Heat 3 tablespoons of oil and 3 tablespoons of the 125 g butter in a high pot. Sauté the spring onions and walnuts in it for a few minutes, then add the chard and stir-fry until it is soft and somewhat collapsed.

Let cool. Add the crumbled cheese to the chard mixture. Also stir in 1 whole egg and then season vigorously with salt, pepper and paprika powder. Tip: If you like it spicier, feel free to add chili powder. Melt the remaining butter, mix with 4 tablespoons of milk and 1 egg as well as the remaining oil. Now stack the pastry sheets one after the other.

Coat each plate with the oil-milk mixture. However, do not coat the top one. Then roll out the puff pastry stack on a floured surface to a rectangle of approx.

40 x 30 cm. Preheat the oven to 200°C convection oven.

Line a baking tray with baking paper. Now spread the chard-nut-cheese mixture on the dough. Then roll up the dough into a strudel (starting from the short side).

Place on the baking sheet with the seam facing down. Mix one egg yolk with 1 tablespoon of milk and brush the strudel with it. If there is any oil-milk-egg mixture left over from brushing the puff pastry, this can also be used further. Place in the oven and bake on the middle shelf for about 30 to 35 minutes. A yogurt sauce goes well with this.

Mix 500 g yogurt, 2 cloves of garlic, 1 tsp harissa, salt and pepper and serve.
