Put on a large pot with lightly salted water.
Mix the ingredients up to and including the water, please add the water slowly as it may not all be needed.
The dough should have a chewy, sticky consistency.
By now the water should be boiling and you can now either pull the dough over a board into spaetzle or just use a spaetzle or potato press to form the spaetzle from the dough.
Then put them into the boiling water and, as soon as they rise, take them out with a ladle and lightly fry the spaetzle in a large pan in which the butter has been left out (please do not let the butter get too hot).
Season with salt, bell pepper and paprika.
Of course, you can add other spices or herbs depending on your taste, but basically you should at least use the three.
Now turn down the heat and sprinkle the whole thing with cheese.
Cover and cook for another 5-10 minutes at low heat.
