Cut the chicken breast into cubes. For the marinade, finely chop the chili pepper and mix with the apple juice, soy sauce and coriander.
Marinate the chicken breast cubes in it for 2 hours. Now put the chicken cubes on skewers, always 2 cubes on the lower third. Sear the skewers on both sides and keep warm in the oven at 100 degrees.
While the pan is still hot, lightly toast the chopped peanuts. Then add the marinade and the peanut butter and let it reduce to a creamy sauce. Brush the skewers with this sauce and serve hot.
