Preheat the oven to 220Β°.
Important: Mix the dough in 2 portions, each with half of the ingredients indicated. Sift the flour, starch and baking powder in a bowl, mix and set aside. Then put all the eggs whole in another bowl, add the water, the sugar, the ‘sponge perfect’ and mix on the highest speed for 7 minutes.
Then turn to lowest speed and let the flour mixture trickle into the egg mixture. Line a springform pan (26 or 28 cm) with baking paper and bake two layers of 2 cm each, one after the other, for 12 – 15 minutes. Be careful, there must be plenty of batter left!
Spread the remaining batter in blobs about 8 cm in diameter on the baking sheet and bake until golden, this will give the legs, head, tail and layers of the shell.
Prepare the chocolate mousse according to package directions. Place the first cake layer on a large cake plate and spread with strawberry jam, place the legs the tail and the head, then place a layer of blobs all around in a nice wide layer (not lapping on top of each other) on the first cake layer. Spread chocolate mousse on top and place the second base and spread it with strawberry jam as well.
Now continue to cover the shell with overlapping blobs. Mix the powdered sugar with water to make a thick paste and add the green food coloring until you have the desired shade. Be careful to only drizzle in the water by the tablespoonful. Finally, cover the entire turtle with it, let it dry and decorate with sugar writing as desired.
