Cut the beef into small cubes and fry them in a very hot pot in a little olive oil. Add the minced meat and then the bacon and continue to fry until the minced meat is well browned. Season with salt and pepper.
Add the finely chopped peppers, the coarsely diced onions, the finely chopped garlic and the finely chopped chiles and stir well. Then add the corn (with the water from the can*!) and stir well, do not turn the heat down, always leave the temperature and always stir well.
Then add the baked beans (also with the sauce) and stir well. Then add the Kidney Beans (also complete with the canned water**) to the pot and stir well, let simmer a bit.
Add the mustard, jam, herbs, bay leaves, cinnamon and broth. Add the grated chocolate and stir in well. Finally, stir in the strained tomatoes. Simmer everything on low heat for an hour, stirring occasionally. Just before serving, season strongly with hickory smoked salt and cayenne pepper. Tastes even better the next day, reheated! The taste rewards the work and expense! This quantity held with 4 people, and 3 baguettes as a side dish no 10 minutes, even the washing up I could have saved!
*)**) Looks not so great, but there is all the flavor in it, and the starch of the legumes binds the sauce additionally something.
