Marinate the chicken with garlic and soy sauce, roll in flour and let sit for at least 30 minutes. In the meantime, cook the noodles according to package instructions. Heat oil in a wok, add the meat with the marinade, roast for about 5 minutes until golden brown. Add cashews and scallions and continue to roast for 3 minutes. Add the noodles and roast for another 2 minutes.
Serve immediately. Sprinkle with finely chopped chili pepper if desired.
Tip: if unsalted cashews are not available, just use salted ones, rinse and dry.
Since we like to eat spicy, I always add a chopped chili pepper under the noodles.
