Melt sugar, butter and water over medium heat, stirring constantly. Add chocolate, melt and then remove from heat and let cool for 10 min. Pour the chocolate mixture into a mixing bowl and mix in egg. Then add flour, baking powder and salt.
Cover and put in the fridge for 1 hour. Preheat the oven to 175°C, grease baking tray (I personally prefer to use baking paper).
Form walnut-sized balls from the dough and place them about 4 cm apart on the tray and bake for about 8-10 min. Attention: The baking time varies depending on the oven. It is perfectly normal for balls to melt into cookies!
After baking, let cool for 1 min and press 1/2 After Eight per cookie on top. Once the After Eight is melted, whisk with a toothpick (so no one can see the nice After Eight pattern).
