Wash the spinach leaves thoroughly and spin dry. Repeat the washing until there is no more sand and soil in the washing water. Then cut off the coarse stems.

Bring 3 liters of water to a boil in a large pot, and briefly blanch the spinach in it in batches.

Remove with a skimmer and immediately place in a colander to drain. Peel and finely chop the onion and garlic. Heat the oil in a saucepan and sauté the onion and garlic until translucent, stirring constantly. Roughly chop the spinach and add to the pot.

Heat briefly, stir in the cream and season vigorously with salt, pepper and nutmeg.

Puree finely with a blender. Total 8 points, with 4 servings per serving 2 points.
