Cut the watermelon, remove the seeds and cut the flesh into small pieces. Remove a small portion of the measured 1.700 kg of pulp cubes and set aside.

Coarsely chop the peppermint leaves and place in a paper filter bag. Fold the corners of the filter so that it cannot open.

Now bring the melon pieces to a boil with the orange juice, lemon juice, grated orange and lemon zest, mint packet, and jelling sugar in a large saucepan and cook until bubbly, according to the jelling sugar package directions, about 3 minutes (do a jelling test!). At the end of the cooking time, remove the mint packet, add the melon pieces set aside and pour the jam into hot rinsed jars. Shelf life approx. 6 months.
