Melt butter and allow to cool slightly. Finely grind 250 g cinnamon stars.

Mix with melted butter and spread on a springform pan (22 cm diameter) coated with oil. Press down and refrigerate for about 30 minutes. Soak the gelatine. Drain the tangerines. Grind another 60 g of cinnamon stars. Mix the mascarpone, yogurt, sugar, lemon juice, mandarin orange and 30 g ground cinnamon stars. Squeeze out the gelatine and dissolve.

Stir 2 tablespoons cream into gelatin, then into remaining cream. Chill until cream begins to set. Whip cream and vanilla sugar until stiff, fold into cream. Cover the base with the edge of the springform pan, pour in the cream and chill for at least 2 hours.


Loosen the edge of the mold. Sprinkle the cake all around with 30 g ground cinnamon stars. Carefully peel the tangerines, cut into slices. Cut the carambola into slices as well. Top the cake with the prepared fruit and remaining cinnamon stars.
