Beat the 3 egg whites until very stiff. A knife cut must remain visible. Sift the powdered sugar completely and beat into the egg whites. Reserve 2 – 3 tablespoons of the mixture for later.
Stir in the vanilla sugar, baking oil, cinnamon and half (i.e. about 150 grams) of the ground almonds or hazelnuts.
Gradually fold in the rest of the nuts until the dough no longer sticks. Depending on your needs, you can use more nuts if the dough is still sticky. Roll out a 0.5 cm thick dough from the mixture. Cut out stars from it.
Of course, you can also use other shapes. Place them on a baking sheet lined with parchment paper and brush them with the beaten egg whites set aside at the beginning. Bake in a preheated oven at 130 – 150 degrees (electric) or level 1 – 2 (gas) for 20 – 30 minutes. It is best to store in a closed tin.
