🍓 Ingredients

2 kilograms Fruit (plums or pears or apples or rhubarb) 📝 🍽
1 splash Lemon juice 📝 🍽
  Water 📝 🍽
1 Vanilla bean cut open and the inside scraped out
1 stick Cinnamon 📝 🍽
1 tablespoon Rum 📝 🍽
1 Clove (for plums) 📝 🍽
  Sugar or sweetener to taste
1/2 bags Custard powder vanilla 🍽
1 piece Star anise (for plums) 📝 🍽

🍽 Instructions

I always make this compote when I have a glut of any of the above fruits. Put cleaned fruit in the pot, pour lemon juice over it and fill up with water just enough to cover the fruit.

Sweeten as you like, usually very little sugar is enough if the fruit is quite ripe.

Stir in a tablespoon of rum, or two if you like it.

Add the cinnamon stick and the inside of the vanilla pod, or even the scraped pod itself. Put half a bag of vanilla pudding powder in a small bowl, take two or three tablespoons of the still cold water in the pot and dissolve the powder. Heat the fruit in the saucepan briefly, stirring only a little or it will break down very quickly. When it first comes to a boil, stir in the dissolved custard powder and stir gently, bring to a boil again and then remove from heat.

In the case of plums, add star anise and clove(s) to the pot, this really lifts the flavor. If you like, you can do the same with other fruits.

Sugar rhubarb beforehand and let juice steep, then fill with water as described above.

Rough guide for quantities: Two kilos of pitted plums required half the packet of custard powder.
