Peel the apples, cut out the core and cut the apples into very narrow wedges. Place these on a large plate and cover with cling film. Cook in the microwave for about 5 minutes. They should be soft enough afterwards that you can easily eat them with a spoon.

Mash the goat cream cheese with a fork and melt it in the heated cream. Be sure to work with low temperature. Season with salt and pepper. Finally, add the olive oil and mix everything until creamy.

Spoon a small spoonful of goat cream cheese mixture into small starter glasses and smooth out.

Top with the soft apple slices. Then goat cheese again and apple again. Layer as many times as you like. The glasses can still be decorated with raw ham or smoked duck or goose breast, if desired.
