2 cups Coffee ready cooked
100 grams Sugar
1 bag Vanilla sugar
200 grams Cream
2 Eggs separately

🍽 Instructions

Boil a light brown caramel from the sugar and deglaze with the coffee. Boil down to about 125 ml, top up with the cream, and leave to cool well in the refrigerator.

Whip the two egg yolks with the vanilla sugar until creamy and stir into the coffee cream. Beat the two egg whites until stiff and fold them in.

Freeze in the ice cream maker.
