Peel and core the apples and cut them into coarse pieces.
Bring apple juice, cinnamon stick, sugar and lemon juice to a boil in a pot. Let it boil down a bit, add the apple pieces and cook for about 5-8 min. until soft. Season with pepper and remove the cinnamon stick.
Allow to cool. Cover the crispbread with 1 slice of ham each, spread the apple compote on top and then: Meal!
