For the crumble, mix flour, sugar, cinnamon and melted butter and chill in the refrigerator. Mix curd, sugar, rum, raisins, vanilla pudding powder, egg yolks and season to taste. Roll out the puff pastry on a baking paper. Spread the quark mixture on it.
Place 2 puff pastry layers on top of the mixture. Sprinkle with grated apples.
Spread cold crumble on the apples. Bake in the oven at 175°C.
