Mix the dough ingredients, knead on a baking sheet and bake half. For the filling, mix curd, sugar, semolina, cream and yolk. Fold in beaten egg whites, spread on the dough and continue baking.
Lattice: beat egg whites and sugar until stiff. Pipe a lattice on the cake and continue to bake until the beaten egg whites are lightly browned. Cut the cake into layers with a knife dipped in water and dust with vanilla sugar.
