Place the cream in a bowl and whip gently.

In a bowl, whip the quark with vanilla sugar, sugar and lemon juice until the sugar is well dissolved.
Carefully fold in the cream and mix only until the cream is well distributed.
Place the very airy mixture in the freezer again for 30 minutes.
Then put the cream into the ice cream maker.
The ice cream can also be put completely into the freezer or prepared without an ice cream maker, but please stir regularly so that no ice crystals can form.
(Due to the curd, the ice cream takes a little longer to freeze than normal).
The quark gives the ice cream a wonderful flavor.
If you like, you can also use flavored quark.
