Prepare the ingredients – to do this, cut the chicken breast into small cubes and season with a little salt, pepper and the cumin. Peel the onion, quarter it and cut it into fine rings. Peel the garlic cloves and grate finely.

Chop the coriander greens finely.

Use the lime whole: Grate the zest and squeeze out the juice.


Sauté the onion with the chili paste in the saucepan, adding the light soy sauce and stirring it in. Add most of the chicken broth and the lentils. Cook at low temperature for about 1 hour – add more broth if necessary, so that there is enough liquid for the soup later. Just before the lentils are cooked, heat the peanut oil in the wok.

Sauté the grated ginger and garlic in it. Add the meat and lime zest and sauté all around. Deglaze with wine (mirin) and lime juice, then stir in the 100 ml chicken broth, honey and soy sauce and stir-fry for a few minutes over continued high heat. Puree about a third of the lentils in a blender, then add back to the remaining lentils. Now stir in the meat mixture from the wok.

Simmer for another 5 minutes and let the flavors combine. Season with chopped cilantro greens and sesame oil and serve hot. Serve with Indian naan or flat bread in general.
