Cut the feta cheese into 1 cm thick slices.
Drain the dried tomatoes and cut them into coarse strips. Cut the garlic cloves into thin slices. Spread a thin layer of tomato oil on each piece of aluminum foil.
Place 1/4 of the garlic slices, 1/4 of the feta slices, 1/4 of the tomato strips and 2-3 thyme stems on top of the foil, sprinkle each with 1 tsp of toasted pine nuts and some coarse pepper. Place a second piece of aluminum foil on top, carefully sliding it along the sides. Cook on the grill for 5 – 10 minutes.
