Wash and chop the vegetables and put them in a pot. Add the remaining ingredients and bring to a boil.
Now simmer for approx. 25 min. Either pass through the whisk and bring to the boil again briefly or puree with a blender. Immediately pour into hot rinsed jars and close with the screw caps.
5 minutes turn the jars upside down and ready. Great for grilled meats, as a dip for fondue, or even with Mexican chips. (I also make it hot on pasta).
