Cook the ribbon noodles in salted water according to package instructions until just cooked and drain well in a colander. Clean the leeks and cut into thin rings.
Fry the leeks with the shallots and garlic in hot vegetable oil for 3 minutes.
Add the drained noodles and stir-fry for about 5 minutes.
Season with soy sauce, sesame oil, pepper and salt if desired.
Mix in chopped nuts and chopped chives. Serve immediately. Tips: If you like it a bit spicy, add 1-2 tsp sambal oelek or red Thai curry paste with the spices. If you like meat, you can fry pork or chicken cut into strips, season with soy sauce and fold in at the end. Vegans must make sure to buy egg-free Mie noodles.
