Drain the cherries, collect the juice and heat in a pot. Mix the cornstarch with a little cherry juice and 1 tablespoon sugar and stir into the boiling juice. Mix in the cherries and let cool.
Cream the quark, sugar and vanilla sugar with a mixer. Whip the cream until stiff and fold into the quark mixture. Fill quark-cream mixture and sour cherries in layers into sundaes or large glasses.
Decorate with wafer rolls, chocolate shavings and some cherries and serve immediately. Also very tasty with fresh strawberries or fruits depending on the season!
