Mix the margarine with the sugar in a bowl until the sugar is almost dissolved.
Add the egg and beat until light and creamy. Mix the whole wheat flour, salt and baking powder, stir into the butter-sugar mixture. Finally, mix in oatmeal, dried fruit and sesame seeds well to make a ‘lumpy’ dough. If you like, you can now flavor the dough with cinnamon or vanilla. Preheat the oven to 180°C.
Meanwhile, line two baking sheets with parchment paper and place small piles of dough on them by the tablespoonful. Use a damp tablespoon to flatten the cookies slightly. Bake for 15 minutes until light brown. The cookies will keep in an airtight tin for about 2 weeks.
The cookies are super quick to make, very tasty and nice and crunchy. You can vary them great with different dried fruits and flavors. Another variation is coconut flakes instead of sesame seeds and dried pineapple.
