Cream the butter with the brown sugar and a pinch of salt. Mix in the two eggs one at a time.
Add grated ginger, orange zest and saffron powder, if desired. Mix the flour with the baking powder and knead it in. Now chill the dough wrapped in foil for about an hour. Roll out the dough on some flour to a thickness of about 3-5 mm and cut out moons (or another shape as desired). Place the cookies on a baking tray covered with baking paper.
Bake in the preheated oven at 160°C convection oven (top/bottom heat: 180°C) for about 12 minutes until golden brown.
