Put the candied lemon peel, candied orange peel and raisins through a meat grinder (I use a food processor).

Pour the cognac over it, cover with the ground nuts and leave overnight. Then add all the remaining ingredients, mix with melted butter (which has cooled again). Spread on the wafers. Do not grease the tray.

Once test bake 20 – 25 minutes at 200 – 220°C. Since the dough is very sticky, I make a small portion on a wafer with a tablespoon and have a small bowl of water next to it, in which I always moisten my index finger and use it to smooth the dough on the wafer.


These gingerbreads are always well received and a lady from a baker’s family said that she herself had never eaten such good gingerbread.
