Water the skewers (if they are wooden skewers).

Peel the onions, finely dice one onion, cut the second into rings.

Peel and finely chop the garlic. Cut the meat into 16 equal cubes and put them on skewers.


Heat 2 tablespoons of oil in a frying pan, sear the skewers vigorously on all sides and fry over medium heat, turning, until done, 18-20 minutes. Heat 1 tablespoon of oil in a saucepan, sauté the diced onion and 1 1/2 cloves of garlic, add the bulgur and sauté briefly.

Deglaze with the broth, bring to a boil and simmer over low heat for about 10 minutes.

Cut the parsley and mint into strips. Cut the tomatoes into slices.


Mix vinegar with salt, pepper and sugar, add olive oil. Mix the tomatoes with the onion rings and drizzle the vinaigrette over them. Fold the mint and parsley into the bulgur, season with salt and pepper. Just before the end of the roasting time, add the remaining garlic to the skewers and season the meat with salt and pepper.

Serve everything on a platter garnished with lemon wedges.
