Preheat the oven to 180°C (gas mark 2-3). Butter two baking sheets. Put the flour, sugar and salt in a bowl and mix. Add the butter and mix until crumbly. Add the eggs and gradually the milk until the dough finally comes together around the dough hooks.

Transfer the dough to the lightly floured work surface and knead quickly for just a few minutes until smooth and elastic. Divide into two portions and shape each into a rectangle about 3 mm thick. Place these on the two prepared baking sheets and moisten the top with a pastry brush.

Sprinkle with sesame seeds and poppy seeds and press them lightly into the dough with a rolling pin. Bake the loaves for 30-40 minutes until dry, crisp and delicately browned. Let cool completely on a cooling rack. Used, for example, for my other recipe, ‘Lavash Rolls with Smoked Salmon.’
