Fry the minced meat in the pot until crispy.
Add onions and garlic and continue to fry. Add salt, pepper and diced zucchini (or other vegetables), let fry. Mix canned tomatoes with 1 tsp harissa paste and tomato paste.
Pour over the top and simmer for about 10-15 minutes. Add up to 1 cup of hot water. It should not burn, but should not become too liquid.
After 5 min, add the cumin.
Put the lid on and let it simmer. Prepare the instant couscous according to package directions, this takes about 10-15 minutes (according to package: 250 g couscous for 3-4 people – equivalent to 1/2 package). Tips: If you are missing the usual flavor base: add 1/2 tsp of grained broth. Harissa paste is a hot chili paste. Start with 1 level tsp and then taste after boiling and add more. The spiciness is just a matter of taste, I use 1 heaping tsp. The meat sauce reheats or freezes well. The dry couscous as a garnish softens the spiciness a bit. Once prepared, couscous is difficult to reheat.
Better to prepare fresh the next day.
Very simple recipe, looks similar to thick sauce Bolognese, but tastes quite different and can be easily adjusted in spiciness (then bring back to a boil). Alternatively, after adding all the ingredients, you can divide the mince sauce between two pots and spice them differently. Be a little brave – it tastes great.
