Put the egg noodles in a pot of boiling salted water and cook in it for about 3 minutes. Then drain in a colander and rinse with cold water. Wash the bean sprouts and drain them in a second colander.
Clean, wash and finely slice the spring onions. Peel the garlic and chop finely. Heat the oil in a frying pan or wok.
First fry the garlic, spring onions and peppers in it. Then add the shrimp and noodles and stir-fry. Then season with the sweet soy sauce and salt. Carefully stir in the sambal oelek to taste. Finally, mix in the bean sprouts and season everything again.
