Preheat the oven to 180 degrees convection. Soak the roll in cold water.
Peel and finely dice the onion. Squeeze the roll and mix with minced meat, minced pork, one egg, onions and mustard. Season with salt, pepper and paprika powder. Form eight minced steaks from the mixture. Spread them on a baking sheet covered with baking paper and cook in the oven for about 25 minutes. Heat the olive oil in a frying pan.
Fry the bacon in it, then remove it.
Top each of the minced steaks with a fried egg. Place the bacon on top. Grate the Gouda and sprinkle it on top.
Bake in the oven for one or two minutes. Serve with fried potatoes.
