Peel the zest of the lemon thinly with a peeler. Finely chop the herbs. Pour the vinegar into a pot and bring to a boil. Place the herbs and lemon zest in a bowl. Pour the hot vinegar over them. Leave to infuse for at least 24 hours. Pour the vinegar through a filter bag into a sterile bottle.
