Stir the dry yeast together with the sugar into the warm water and let stand briefly. Meanwhile, mix all the flour with the sourdough extract, salt, bread spices and possibly with the grains (flax seeds, pumpkin seeds, sunflower seeds, nuts). Then add the water with the yeast and sugar and knead everything well.

At least 5 min, best with your hands, then the love is also in the bread (tastes much better immediately!). It must become a nice smooth dough that does not stick and is not too dry, possibly add some flour if it is too wet. Let the dough rise in a warm place, about 1 hour, until doubled in volume, then knead again and let it rise again until doubled in volume.

In total, the dough should rise and knead together three to four times, the more often the better. The dough can be baked in the following molds: 2 loaf pans or 1 springform pan or 1 Roman pot (without lid) or … just like this on a baking tray.


If the bread is baked in a mold, brush the mold with a little oil beforehand. Dough purely and again something go let approx. 20 min. Afterwards the dough above something cut, this prevents the uncontrolled bursting. Bake at 180 degrees for about 65 – 85 minutes.

To get a nice crust, put a bowl of water in the oven. The bread is ready when it is lightly browned and sounds hollow when tapped on the underside.
