Sear the meat in hot fat and season with salt, pepper and paprika powder.
Add the onions and mushrooms and fry briefly. Dust everything with flour, stir and deglaze with broth and cream or milk. Cover and simmer for about 20 minutes – the meat should be very soft. Season to taste with mustard and add more seasoning if necessary. Serve with tagliatelle, rice, baguette or mashed potatoes, as required.
