Oatmeal Bread with Sourdough

🍓 Ingredients

5 grams Yeast fresh
450 grams Flour
100 grams Oat flakes
150 grams Sourdough (wheat)
1 teaspoon Sugar
10 grams Salt
20 grams Butter soft
200 milliliters Water
100 milliliters Milk lukewarm

🍽 Instructions

Dissolve the yeast in the lukewarm water and add the salt.

Put the jar aside for a good 30 minutes. (The yeast can also be omitted if you have a strong sourdough.

The leavening power would then be completely sufficient, only the leavening time would be slightly longer). Then put all the remaining ingredients in a bowl, add (yeast) salt water and mix everything very well together.

(You should knead the dough vigorously for at least 5 minutes, as much as possible, 7-10 minutes is best).

Now let the dough rest covered in a warm place for at least 60 minutes. (The dough will be relatively ‘sticky’, but this is quite normal, so please do not add more flour).

The dough can also be prepared completely in the bread machine!

After resting, briefly knead the dough again as well as possible.

Put the dough into a loaf pan or a special bread pan and let it rise for at least 45 minutes.

After the dough has risen, place it in the preheated oven and bake at 200°C top/bottom heat.

After a good 10 minutes, switch down to 180°C and bake for another 40 minutes.

The oat flakes taste particularly good in the bread if they are roasted briefly beforehand in a pan without oil.

They then get a fine, nutty note.
