Peel, halve and finely slice the onions (if you like, you can also use a cucumber slicer).

Heat the butter in a pot. Peel the garlic, dice finely and sauté together with the onion rings. Add the flour and brown lightly. After a few minutes, pour the broth and simmer, covered, for 20 minutes. Add the white wine only at the end of the cooking time.

Also shortly before the end of the cooking time, melt the butter in a pan and toast the bread cubes in it until golden brown. Finally, deglaze with the cognac or grappa, tossing a bit.

Pour the soup into ovenproof bowls, spread the bread cubes over the soup and place the cheese on top. Bake on the middle rack in the oven with the grill on for about 5 minutes.

Serve immediately.
