Quickly knead a smooth dough from flour, butter, powdered sugar, egg yolk and orange zest. Refrigerate for about half an hour.
Then roll out the dough, cut out stars, brush with the glaze and place on a baking tray lined with baking paper.
Bake in the oven at 180 degrees for about 15 minutes. While still warm, put two stars together with some orange jelly.
For the glaze, whisk the egg whites with the powdered sugar until thick and fluffy. Squeeze the orange and stir in the juice well.
Makes about 60 pieces.
